Pasta with Tomatoes, Zucchini and Basil



















Angel hair tossed with zucchini and tomatoes, sprinkles with parsley, basil and Parmesan cheese.
This is a recipe for light pasta without using marinara sauce. Instead I use fresh tomatoes and zucchini. Easy to make and ready in less then 30 minutes.


Servings-4

Ingredients:

  • zucchini-2 large chopped
  • 2 tomatoes -diced
  • 2 cloves garlic, chopped
  • 2 tsp olive oil
  • salt and pepper to taste
  • red pepper flakes to taste
  • 2 tsp chopped parsley
  • 1 tsp chopped fresh basil
  • 8 oz angel hair pasta
  • Parmesan cheese
Directions:

Cook pasta according to instructions. In a pot of salted boiling water for the time directed.

In a saute pan heat olive oil on medium heat and add garlic. Cook for a minute. Add zucchini and season with salt and pepper. Cook for 3-5 minutes and add tomatoes , red pepper flakes, parsley,  basil and adjust salt and pepper. Stir and remove from flame.

Drain pasta and toss it with tomato and zucchini mixture. . Serve with grated Parmesan.
