Skirt Steak Recipe
















Skirt steak can be tricky cut of meat to cook. It is really important to marinate it before cooking to minimize toughness. This steak is covered with a tough membrane that should be removed before cooking.  I usually cook steak on my outdoor grill, but it is very cold outside, so I decided to pan sear it. You need a really high temperature and I recommend cook it between 1 and 2 minutes per side. When done cooking remove it from the heat and let it rest for a few minutes.
It is important to cut it across the grain and at a slight angle. Skirt steak is perfect to be used for tacos, sandwiches or served on top of a salad.

Here is an idea of how to marinate skirt steak :

For 1 lb (500 gr) skirt steak you will need:

3 tablespoons olive oil
2 tablespoons soy sauce
2 tablespoons Worchestershire sauce
2 tablespoons lemon juice
2 cloves garlic smashed
1/2 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes

Mix all ingredients for the marinate together. In a large zip lock bag put pieces of steak and pour marinade. Close the bag and put it in the refrigerator. Let it marinate for 1 hour.
Heat a skillet over high heat. Remove steak from the zip lock bag and pat dry. Cook each side for 1-2 minutes. Let it rest for a few minutes and slice it if you like. You can serve it with a side of mashed potatoes or a salad.
