Post Easter Egg Salad (Spread)

Egg Salad



Today's recipe is for a simple egg salad. which can also be turned and enjoyed as a dip or spread. I like making it all the time, but especially after Easter, when I have a lot of left over hard boiled eggs. The after easter version is even more colorful one, since the eggs were colored previously.
This salad is easy to make and it is also full of protein. Great on its own or as a spread on a piece of bread or with crackers.






Here is what you need:

Ingredients:

4 hard boiled eggs peeled and chopped into small pieces (you can also use a grater and shred the eggs)
4 tbsp mayo
1 tsp Dijon mustard
1 tsp salt
1/2 tsp black pepper
2 tbsp lemon juice
1 tbsp chopped green onion for garnishing

Directions:

Stir eggs, mayo, mustard and lemon juice in a bowl. Season with salt and black pepper. Add some green onion on top.
