Egg Salad |
This salad is easy to make and it is also full of protein. Great on its own or as a spread on a piece of bread or with crackers.
Here is what you need:
Ingredients:
4 hard boiled eggs peeled and chopped into small pieces (you can also use a grater and shred the eggs)
4 tbsp mayo
1 tsp Dijon mustard
1 tsp salt
1/2 tsp black pepper
2 tbsp lemon juice
1 tbsp chopped green onion for garnishing
Directions:
Stir eggs, mayo, mustard and lemon juice in a bowl. Season with salt and black pepper. Add some green onion on top.
