Sweet Potato Fries |

Ingredients:
2 large sweet potatoes
1 cup oil
1/2 tsp paprika
1/2 tsp garlic powder
salt and black pepper to taste
Sriracha Mayo:
1/2 tsp Sriracha (can add more if you liked spicy)
1/2 tsp Dijon mustard
1/2 cup mayo
Directions:
Wash and scrub potatoes. Dry with paper towel. Cut them into medium pieces, around 1/4 inch thick. Sprinkle paprika and garlic powder over them.
Some recipes suggest tossing potatoes in corn starch, so they stay crispy, but I haven't tried this.
In a large frying pan heat oil over high heat. Fry potatoes in batches , leaving enough space between them, don't squish them. It usually takes around 7-10 minutes to fry one batch, but it depends on the size of the pan and heat you are using.
When potatoes are fried to the desired crispiness, remove from oil and allow to drain.
To prepare the Sriracha mayo, mix together mayo, Sriracha and Dijon mustard.
Season sweet potato fries with salt and pepper to taste. Serve with Sriracha mayo.
