Watermelon Mojito |
Another cocktail recipe? Sure, I would like to share with you this one, since it is watermelon season I couldn't resist sharing this delicious cocktail recipe. This is also a great pitcher cocktail.
Again, I prefer making mojitos using simple syrup.
Watermelon Mojito
Ingredients for 1 mojito:
5-6 mint leaves
2-3 oz white rum
3 oz watermelon juice
2 oz simple syrup
Juice from 1 lime
soda water
ice
1-2 limes cut into wedges and mint leaves for garnishing
Directions:
- In a blender puree watermelon pieces , then strain through a fine mesh sieve to extract as much liquid as you can. (We need about 3 oz watermelon juice for a single cocktail).
- In a large glass combine mint, simple syrup and lime juice. With the back of a wooden spoon (or you can use a wooden rolling pin) muddle, but don't break mint leaves. Add ice. Pour in watermelon juice, rum and soda water. Stir to combine.
- Serve mojitos garnished with mint springs, lime wedges and a slice of watermelon.
