Yogurt With Chia Strawberry and Blueberry Jam

Hi everyone!
Today I have a special recipe for yogurt with strawberry and blueberry jam. 
I got inspired for this recipe by the coming 4th of July / Independence Day Holiday here in the USA.
Recently, I was searching for patriotic recipe ideas and that's how I came up with this healthy recipe.
Chia yogurts are great for breakfast or quick snack. On more information about chia seeds, make sure you check out my chia yogurt with fruit recipe.


I wanted to  create a patriotic dessert with yogurt, strawberries and blueberries, which include all colors of the American flag. But then I decided to make something different -mix some plain yogurt with chia and layer strawberry and blueberry chia jams on top.
Chia jams have been extremely popular lately and there are raw and cooked versions of them.
I decided to go with the cooked version.
The recipe for both strawberry and blueberry jams is identical, just substitute blueberries for strawberries.
It only takes 20 minutes to make, but one done, you have healthy, delicious jam, with no preservatives.
You can use fresh or frozen fruit, it all depends on what you have.
Just heat the berries, mash them, add chia seeds, sweetener and vanilla extract (optional) and that's how easy it is.
Chia seeds expand and thicken the jam i minutes. No more cooking your jams for hours. Chia jams take very little time to make. It can be stored in the fridge for up to 2 weeks.
Chia jams are great for toast, pancakes, crepes, PBJ sandwiches, ice cream or yogurt.
Actually one of my favorite way to enjoy them is with yogurt!
Here is my recipe for chia yogurt with strawberry and blueberry chia jam.


Ingredients:

Chia Yogurt

For the chia yogurt, depending on how many servings you'd like to prepare, add 1 teaspoon chia seeds per each cup of plain Greek yogurt. 

1 cup greek yogurt per serving
1 tsp chia seeds per serving


Strawberry Chia Jam

1 lb strawberries (fresh or frozen)
2 tbsp agave nectar (maple syrup)
1 tsp vanilla extract
2-3 tsbp chia seeds

Blueberry Chia Jam

1 lb blueberries (fresh or frozen)
2 tbsp agave nectar (maple syrup)
1 tsp vanilla extract
2-3 tbsp chia seeds


Directions:

Chia yogurt:

Combine yogurt and chia seeds and stir to evenly distribute seeds. Place in the fridge  for at least 1 hour, or overnight.

Strawberry/Blueberry Jam:

Since I made 2 different jams, with different fruit for this recipe, here are the directions for making strawberry jam and you can substitute with blueberries for the blueberry one.

  1. In a pot, bring strawberries to a boil, stirring frequently. Reduce heat to low and simmer for 5-7 minutes. Once they soften, using a potato masher mash strawberries. You can leave some bigger chunks if you want to.
  2. Add agave nectar and chia seeds. Stir and cook on low for another 5-7 minutes, until jam thickens.
  3. Remove from heat and add vanilla extract. Cool at room temperature.
  4. You can store jam in an air tight container (glass jar).
To assemble the yogurt with chia berry jams:

In a glass / small bowl layer 1 cup cool chia yogurt. Add a layer of 2-3 tbsp strawberry jam and a layer of 2-3 tbsp blueberry jam.

This yogurt is way healthier than store bought fruit yogurt.
