Banana Walnut Bread

Banana bread is a standard recipe of American Cookbooks. The perfect recipe for when you have some very ripe bananas that seem uneatable. It is easy and fun to make and I love the nutty buttery smell of it. Made with baking soda, baking powder and ripe bananas this recipe will help you make a sweet moist cake like bread. I like adding walnuts which makes it more tasty and flavorful.

This recipe makes 1 loaf or about 12 thin slices. I am using 11"x5"x3" loaf pan.

Ingredients:

2 very ripe bananas mashed
1 cup walnuts
2 large eggs
1.5 cup flour
1 cup sugar
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon baking powder
4 oz (125 gr) butter + more for greasing the pan
pinch of salt

Directions:

  1. Preheat oven to 325 F (160 C).
  2. Combine flour, salt, baking powder and baking soda. Set aside for when needed.
  3. Cream butter and sugar until fluffy.
  4. Beat eggs in a bowl and add vanilla. Add egg and vanilla mixture to butter and sugar and mix well.
  5. Mix in mashed bananas, flour mixture and walnuts. Keep mixing until well combined.
  6. Pour batter into a buttered and lightly floured pan. Flouring the pan helps the bread rise well and prevents any collapse after it comes out of the oven.
  7. Bake for 1 hour on 325F (160 C) or until toothpick inserted in the center comes out clean.
  8. Let it cool for 15 minutes before taking the bread out of the pan.
 Enjoy !
