Sometimes marinating mushrooms yourself is a better idea than buying them from the store. You can choose what ingredients and herbs to use and make them suit your taste. Here is an easy recipe for pickled mushrooms:


Ingredients:

1 lb (0.5kg) Mushrooms (I'm using baby bella)
1/2 cup vinegar
1/2 cup olive oil
4 garlic cloves
10 black peppercorns
2 tbsp salt
1 tbsp sugar
1/4 teaspoon dried oregano
1 tsp basil
2 bay leaves
2 tbsp chopped fresh dill
2 cups water



Directions:

Clean with damp towel or wash mushrooms.
Bring water, vinegar, basil, oregano, salt, sugar and bay leaves to a boil in a large pot. Boil for 2 minuets. Add mushrooms. Boil for no more than 5 minutes. Pour mushrooms and marinade to a jar and add black peppercorns, garlic, olive oil and dill. Close the jar. I am using a 59 oz (1.7 kg) jar for this amount of mushrooms.  Chill for 10 hours. Then they are ready to eat. You can store them in refrigerator for up to 2 months.
