Moussaka Recipe |
Moussaka is an eggplant and/or potato dish popular in Balkan and Mediterranean cuisines with a lot of variations.
Today I am sharing with you a Bulgarian recipe for moussaka. It is made with potatoes and ground meat , preferably ground pork and the top layer is yogurt mixed with raw eggs and a couple spoons of flour. Also featuring a very popular Eastern European spice with unique flavor called Chubritza or Summer Savory in English (more info here).

Ingredients:
For the bottom layer:
1 lb (500gr) ground pork, you can use a mix of ground pork and beef
3 lb (1.5 kg) potatoes peeled and diced
4 tablespoons tomato sauce
1 carrot diced
1 small onion diced
1 tablespoon Vegeta here
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon Chubritza ( Called Summer Savory in the US)
1-2 cups water
1 tablespoon vegetable oil
For the top layer:
2 eggs
5 tablespoons yogurt
2 tablespoons flour
1/4 teaspoon baking soda
1/4 teaspoon salt
Directions:
- Preheat oven to 375F
- In a large skillet saute onion in oil for 2 minutes over low to median meat. Then add carrot and cook for 2 more minutes.
- Add ground meat and cook until it is no longer pink.
- Add tomato sauce, Vegeta, salt , black pepper and Chubritza (Summer Savory) and mix well.
- Add diced potatoes , mix well and cook them for 10 more minutes.
- Transfer everything from skillet to a casserole dish or any oven safe dish you want to use.
- Add water to casserole dish just slightly covering potato and meat.
- Bake in the oven for about 45 minutes to 1 hour or until most of the water evaporates and potatoes start to brown.
- Meanwhile prepare top layer. Beat 2 eggs. Then add baking soda to yogurt and mix well. Add yogurt and flour to eggs and mix until well combined. Add salt.
- After potatoes start to brown and water evaporates from the casserole, add the top layer to it and spread it evenly over the top.
- Bake it for another 10 minutes, keeping an eye on it and take out of the oven when top layer turns slightly brown.
You can serve it hot.
