Carrot Salad Recipe |
All you need is:
Ingredients:
4 medium carrots
juice and zest from 1/2 lemon
1/2 teaspoon cumin
6 tablespoons olive oil
1 garlic clove pressed
2 tablespoons chopped parsley
Salt and black pepper to taste
Directions:
- Wash and peel carrots. Slice them into thin rounds. Set a pan with salted water and bring to a boil over medium heat. Add carrots and boil for no more than 2 minutes. Remove from heat and pour cold water over carrots to stop the boiling process.
- To make the dressing combine garlic, cumin, salt, pepper, lemon juice, lemon zest and olive oil and mix well.
- Drain carrots, put them in a bowl and pour dressing on top. Add chopped parsley.
