Spinach Strawberry Salad With Candied Walnuts


Hi everyone!
Today's recipe is for strawberry spinach salad. Light salad, perfect for lunch.

Ingredients for one salad

2 cups baby spinach (washed and dry)
4 large strawberries sliced
2 tablespoons crumbled blue cheese
1/4 cup candied walnuts


Balsamic Vinagrete Dressing
3/4 cup olive oil
1/4 cup balsamic vinegar
1/2 teaspoon dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon oregano
Mix all ingredients together. This dressing should be enough for 2 salads. It all depends on how much dressing you like on your salad.

Candied Walnuts

Candied Walnuts


1 cup walnuts (can use pecans)
1/4 cup sugar
1 tablespoon butter
2 drops vanilla extract (optional)
Melt butter in a sauce pan over medium heat. Add walnuts and sugar. You can add vanilla extract if you'd like to.  Stir mixture so it gets mixed well and walnuts het covered with butter and sugar. When sugar starts to melt, stir occasionally for 5-10 minutes to make sure the walnuts do not burn. Be very careful, because they can easily burn. When all walnuts are  coated with melted butter and sugar and get to a nice golden brown color, remove from heat and place on a sheet of parchment paper. Make sure you separate nuts right away and let them sit until the coating hardens.
Then you van transfer them to a bowl, or right away use them on your salad.

To put the salad together, in a bowl put spinach, strawberries, blue cheese and candied walnuts. Pour dressing on top.
