Rich and tasty broccoli and cheddar soup inspired by Panera Bread Restaurant.
Ingredients:
3 cups chopped broccoli
2 tbsp vegetable bullion (vegetable stock)
1/2 medium onion diced
1 tbsp flour
1 tbsp butter
1 cup warm milk
3 cups water
1 cup cheddar cheese (can add more, I just don't like a lot of cheese)
1 tsp black pepper
1 cup grated cheddar cheese
add salt if needed

Directions:
- In a pan saute onions in butter over medium heat until translucent. Set a side. In a small bowl mix together 1 tbsp flour and 3 tbsp warm water and set a side.
- In a large pot combine 3 cups water and 3 tbsp bullion,flour and water mixture and bring to a boil. Add broccoli and onion and simmer for 25 minutes over medium heat until broccoli is tender. Add warm milk salt and pepper and stir.
- You can choose between mashing broccoli with a large fork puree soup in a blender. I personally like pureeing the soup because it gets smooth and creamy.
- Add grated cheddar cheese on top.
