Broccoli Soup

Rich and tasty broccoli and cheddar soup inspired by Panera Bread Restaurant.






















Ingredients:

3 cups chopped broccoli
2 tbsp vegetable bullion (vegetable stock)
1/2 medium onion diced
1 tbsp flour
1 tbsp butter
1 cup warm milk
3 cups water
1 cup cheddar cheese (can add more, I just don't like a lot of cheese)
1 tsp black pepper
1 cup grated cheddar cheese
add salt if needed


Directions:


  1. In a pan saute onions in butter over medium heat until translucent. Set a side. In a small bowl mix together 1 tbsp flour and 3 tbsp warm water and set a side.
  2. In a large pot combine 3 cups water and 3 tbsp bullion,flour and water mixture and bring to a boil. Add broccoli and onion and simmer for 25 minutes over medium heat until broccoli is tender. Add warm milk salt and pepper and stir.
  3. You can choose between mashing broccoli with a large fork puree soup in a blender. I personally like pureeing the soup because it gets smooth and creamy.
  4. Add grated cheddar cheese on top.
