Today's recipe is a shrimp tacos recipe, that I put together after experimenting for a while. It is very light and fresh , good for any time of the year. I prefer using flour tortillas, but you can use corn as well.
Servings 4 (8 small tacos)
Ingredients:
1 lb shrimp (peeled)
2 tsp taco seasoning
2 tsp olive oil
1/2 tsp salt
2 tbsp lime juice
3 tbsp mayonnaise
1 avocado
1/2 small onion chopped
1/2 jalapeño pepper cut into tiny pieces
juice from 1/2 lemon
1/2 tsp salt
1 tsp cilantro
2 cups finely shredded green cabbage
1/2 tsp salt
2 tsp lime juice to cabbage
8 flour tortillas
1 cup diced tomatoes
1 cup shredded cheese (Preferably cheddar. I used mozzarella in this case.)
1/2 cup sour cream
lime wedges
2 tbsp cilantro leaves chopped
Directions:
- Season shrimp with taco seasoning, lime juice, salt and olive oil.Cook in a \pan over medium heat for 3-4 minutes per side. Then remove prom heat and when it cools down a little mix in with mayonnaise.
- To make guacamole- mash avocado with fork, add onion, jalapeño pepper, lemon juice, salt and cilantro and mix together.
- Season cabbage with salt and lime juice.
- Warm tortillas in a skillet over medium to low heat. Cover with a clean towel until ready to use.
- To assemble the tacos: Put a spoonful of shrimp over each tortilla. Then add a spoon of guacamole. Add cabbage. Top with shredded cheese, diced tomatoes,sour cream, some cilantro leaves and drizzle with a few drops of lime juice.
