Red Lentil Dip Recipe

Today's recipe is for a vegetarian red lentil dip. You can serve it as a dip with chips or vegetables and also serve it as a sandwich spread. Feel free to add more or omit some of the condiments.









Ingredients:

1 cup red lentils picked through and rinsed
4 cups water
1/2 chopped onion
2 cloves garlic
4 tbsp tomato sauce
1 tsp salt
1/2 tsp paprika
1/2 tsp ground cumin
1/2 tsp black pepper
pinch of hot red pepper
2 tbsp lemon juice
dill for garnishing


Directions:

In a large sauce pan combine lentils, water , tomato sauce onion and garlic. Bring to a boil over medium heat. Cook lentils until they are tender and separated (15-20 minutes). Drain lentils if there is too much water left in the pan, but lentils appear cooked. Add cumin, hot red pepper, paprika, black pepper, salt and lemon juice. Transfer to a food blender or processor and blend until smooth and well combined. Check how it tastes and if you need to add more condiments. Let it cool down. Garnish with fresh dill and sesame seeds. Serve with pita chips or crackers.
