Twice Baked Potato |
You can make twice baked potatoes in many different ways. I personally like them loaded with bacon and cheese. Here is a simple recipe I enjoy making. Feel free to adjust it to your own taste!

Time-1.5 hours
Ingredients
4 medium sized potatoes
1 small onion chopped
2 tbsp butter
2 tbsp olive oil
2 tbsp sour cream
4oz (100gr) Bacon
7oz (200gr) Mozzarella cheese
salt and black pepper to taste

Directions
Preheat oven to 350F (200C)
Wash and dry potatoes. Sprinkle or spray with some olive oil and put them in a baking dish. Bake for 1 hour or until done.
Set a sauce pan over medium heat and sauté onion in olive oil for 5 minutes. Add sliced bacon and cook on low heat for another 3 minutes. Take out of the pan and set on paper towel.
When potatoes are ready cut the tops of them and carefully scoop out the centers, leaving a little bit of potato around the edges. You can cut potatoes in halves, this way you'll get two smaller double baked potatoes, or cut just the tops and get one large baked potato.
Mash scooped potato in a bowl, adding salt , black pepper, butter, sour cream and most of the cheese. Leave some cheese to put on top of potatoes.
Scoop the filling back into the potato skins. Add remaining cheese on tip.
Bake for another 10-15 minutes until cheese on top is bubbly and golden.
Serve decorated with parsley.
