Mushroom Quinoa |
Today's recipe is for healthy quinoa with mushrooms. It is great for a side dish, but feel free to add chicken if you'd like and turn it into a meal.
Full of protein and gluten free, quinoa is very easy to cook and a perfect product for healthy recipes.
Servings - 2
Prep time -10 minutes
Cook Time 25 minutes
Ingredients:
1 cup quinoa (rinsed)
2 cups water
1 tbsp butter
3 tsp olive oil
3 cups mushrooms
1 small onion (diced)
1 tsp black pepper
1/2 tsp garlic powder
1 cube chicken bullion (1 tbsp)
1 tsp parsley
2 tbsp lemon juice
Directions:
- In a large pan combine chicken bullion, butter and water. Add quinoa. Set temperature to high, bring to a boil and then cover and reduce heat to low. Cook for 20 minutes until quinoa absorbs the liquid. Fluff with fork. Set a side.
- In a different pan cook mushrooms in olive oil until they release water and then add onion, black pepper and garlic powder. Cook for 5-7 more minutes on medium heat. Add parsley and lemon juice. Add cooked quinoa and mix well. Serve the dish warm.
