I wanted to share with you a recipe for sweet bread pudding, made from Easter left over bread and served with warm and sweet egg, sugar, orange liqueur and butter sauce. The sauce is optional, but I really like the taste and creaminess of it.
Ingredients:
4 cups cubed sweet bread (I'm using easter bread)
2 cups milk
2 tbsp melted butter
2 eggs
1 tsp vanilla
3 tbsp raisins (previously soaked)
2 tbsp walnuts
2-3 tbsp sugar
1/4 tsp cinnamon
2 tbsp orange liqueur (optional)
Sauce:
1 egg
1/2 cup sugar
4 tbsp melted butter
1 tbsp orange ligueur (optional)
Directions:
- Preheat oven to 350F.
- Coat a baking pan with spray and set a side.
- Whisk together eggs, sugar, vanilla, milk and butter.
- Place cubed bread in pan and pour mixture on top. Add raisins, walnuts and sprinkle with some cinnamon. Set a side for 20 minutes to allow bread to start absorbing the custard.
- Bake for 35 - 40 minutes until custard is just set.
- Cool on a rack, while making the sauce.
- To make the sauce whisk together egg, sugar, butter and orange liqueur in the top of a double broiler. Keep whisking until it gets warm and creamy or for about 5 minutes. Make sure you use the sauce hot.
- Serve bread pudding warm and pour some hot sauce on top of it and around it.
